Traditional African Biltong Stew

Making this stew is easy because all of the ingredients can be consumed as is, therefore not much cooking time is required.

 

Ingredients

  • 1 tablespoon peanut oil
  • 11 ounces biltong, thickly cut 
  • 1 onion, chopped
  • 2 cloves garlic
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons tomato paste
  • 2 tablespoons peanut butter
  • 2 tomatoes, chopped
  • cayenne pepper, to taste
  • 1/2 cup water

 

Instructions

In a large pan over medium-high heat, fry the chopped onions, garlic, and ginger in the oil for a couple of minutes, or until translucent.

Add the biltong and saute for 30 seconds.

Add the tomato puree and peanut butter and stir to coat.

Add the chopped tomatoes and cayenne pepper (if using), and cook for 5 minutes until slightly reduced. Pour in the water and simmer for 10 minutes until the stew has reduced to a thick sauce.
